Abstract
Kapulaga Foodtruck is one of the small and medium enterprises that is developing in the city of Sidoarjo, a food truck that has several branches of this shop may be familiar to the people of Sidoarjo City, this business can be said to be quite successful but there are some disadvantages that make Kapulaga not maximum and optimal during operation. This study aims to find the location of the shortcomings of the culinary business, so that Kapulaga becomes a developed and developing business. The technique for finding a factor uses triangulation techniques. The best solution for Kapulaga to become more advanced is by improving the operational sector and human resources.
There are several supporting aspects that must be observed by business owners, among others, are the order boards that have not been available until now, according to Mr. Zafran as interviewees, order boards are one of the most important things considering it is a sign that consumers who order understand and do not need to be confused to make an order, service SOP which also includes employee hospitality in serving consumers
