dc.description.abstractCulinary Experts like Tendi Naim and Arie Parikesit predicted that healthy food is the next food trends that will be popular, especially among the urban people. Gotcha Escargot Chips is a product of Sinergi Pemenang company in the form of snacks with high nutritional content such as high protein, low fat, and no cholesterol. In their way, the company realized that people is still difficult to accept food products made from escargot for their perception of "disgust" and dirty. The purpose of this study was to determine consumer perceptions of Gotcha Escargot Chips product quality and how to improve them. This study used descriptive qualitative approach where the researcher itself going to the field, data collection, analysis, and make the conclusions. The data collection is done by using a semi-structured interview to three loyal consumer of product Gotcha Escargot Chips, an owner of similar company, as well as the food expertise. The results of this study indicate that taste is the most important component in a food product, and the perception of "disgust" occurs when people have not tried escargot for imagining its current form alive. But when they get used to eat it, the perception of "disgust" will disappear.en_US
