| dc.description | This study aims to optimize the utilization of duck egg shell and to determine public
acceptance towards cat tongue with duck egg shell powder. The results showed that
duck egg shells are high in calcium which is beneficial for the body. Duck egg shells
can be utilized more optimally by processing them into powders and used them as
ingredients in food products making. In this study, trials on cat tongue products
were carried out by substituting 10%, 15%, and 20% of duck eggshell powder,
which were dried by roasting and drying methods. Based on the results of the
organoleptic test and one-way ANOVA statistical analysis, the best treatment is
substitution of 10% duck egg shell powder which is dried by the roasting method.
Based on the results of the market acceptance test by 10 informants, the cat tongue
powder duck egg shell is worth selling and accepted by the people of Mojokerto. | en_US |
| dc.description.abstract | Penelitian ini bertujuan untuk mengoptimalkan pemanfaatan limbah cangkang telur
bebek dan mengetahui penerimaan masyarakat terhadap lidah kucing yang diolah
dengan bahan bubuk cangkang telur bebek. Hasil penelitian menunjukkan bahwa
cangkang telur bebek tinggi akan kalsium yang bermanfaat bagi tubuh. Limbah
cangkang telur bebek dapat dimanfaatkan secara lebih optimal dengan diolah
menjadi bubuk dan dijadikan bahan substitusi dalam pembuatan produk makanan.
Dalam penelitian ini dilakukan uji coba produk lidah kucing dengan substitusi
bubuk cangkang telur bebek sebesar 10%, 15%, dan 20% yang dikeringkan dengan
metode pemanggangan dan penjemuran sebanyak 3 kali ulangan. Berdasarkan hasil
uji organoleptik dan analisis statistik one-way ANOVA, perlakuan yang terbaik
adalah substitusi sebanyak 10% bubuk cangkang telur bebek yang dikeringkan
dengan metode pemanggangan. Berdasarkan hasil uji penerimaan pasar oleh 10
informan, lidah kucing bubuk cangkang telur bebek layak dijual dan dapat diterima
oleh masyarakat Mojokerto. | en_US |
